Healthy Bacon and Tomato Quiche
 
 
Ingredients
  • 8 slices of nitrate free bacon
  • 8 eggs
  • 2 cloves garlic, minced or grated (optional/I left out)
  • ¼ cup chopped fresh basil
  • ½ tsp sea salt .
  • 1 tsp black pepper
  • 2 cups chopped organic spinach
  • 12 cherry organic tomatoes, halved
  • 1-2 tablespoons bacon fat reserved from cooking bacon
Instructions
  1. Preheat oven to 375 F
  2. Slice the bacon crosswise into ¼ strips
  3. Cook bacon in medium skillet until fat is rendered and meat is cooked, approximately 8-10 minutes.
  4. Remove bacon from pan, drain on paper towels, reserve the fat.
  5. In a large mixing bowl whisks eggs, garlic, chives, basil, salt and pepper until well combined. Stir in spinach.
  6. Grease 9x11 inch baking dish with reserved bacon fat, pour in egg mixture.
  7. Top with bacon pieces and cherry tomato halves.
  8. Bake for 30-35 minutes or until quiche puffs up and becomes golden brown on the edges.
