3-5 Tbsp. chili powder (depending on your preference)
2 tsp. ground coriander
2 Tbsp. ground cumin
2 cups beef stock (fresh or store-bought) – I use veggie stock (just how I roll!)
1 cup dark beer – (yes add the beer even if you don’t like or drink beer!)
1 can (28 ounces) chopped tomatoes
1 can (15 ounces) organic kidney beans, rinsed and drained
1 can (15 ounces) organic white beans, rinsed and drained
2 tsp. kosher salt
Garnish:
Sour cream
Chopped scallions
Cilantro
Cheddar cheese
Hot red chili flakes
Tortilla Chips
Plantain Chips
Instructions
Heat a large Dutch oven over med-high heat. Remove casings from turkey sausage. Add sausage, onion and grated garlic to pan, cook until sausage is brown, stirring to crumble.
Add chili powder, coriander, cumin and mix well. Cook for 1 minute.
Add stock, beer, tomatoes, beans and salt. Cover and simmer on low heat for 1 hour, checking and stirring every 15 minutes.
Season with kosher salt and crushed pepper.
Serve and garnish with tortilla chips, sour cream, chopped scallions, cilantro, cheddar cheese and hot red chili flakes! Jalapeños optional.
