Ingredients
Chicken Breast On The Bone, Large — 4
Fresh Parsley — 1 Tablespoon
Fresh Sage — 1 Tablespoon
Black Pepper
Kosher Salt
For the Marinade
Garlic — 8 Cloves
Pumpkin Puree, Canned — 3 Tablespoons
Extra Virgin Olive Oil — 1?3 Cup
Apple Cider Vinegar — 2 Tablespoons
Honey — 2 Tablespoons
Cloves, Whole — 8
Cayenne Pepper — 1?4 Teaspoon (omit for kids)
Ground Ginger — 1?2 Teaspoon
Nutmeg — 1?4 Teaspoon
Smoked Paprika — 1 Teaspoon
Instructions
Peel and smash garlic cloves.
Place all the marinade ingredients in a large bowl and mix with a whisk to combine.
Rinse the chicken breasts with cold water and season them with salt and pepper.
Place the chicken breasts in the marinade bowl and toss to coat them evenly with the mixture.
Cover with plastic wrap and refrigerate for at least 1 hour. Can be left overnight.
Chop fresh parsley and sage.
Set your oven to broil.
Place the marinated chicken breasts in an oven-proof dish, skin side up.
Roast under the broiler for [7 minutes], then, using tongs, flip the breasts skin side down and roast for 7 more. Decrease the oven heat to 400 °F, flip the breasts again, and roast for 30-40 minutes or until a thermometer inserted into the thickest part of the meat reads 165 °F.
Garnish the pumpkin-spice-roasted chicken with fresh parsley and sage and serve immediately.
