Eating Paleo and gluten-free means eliminating all the fun white stuff like rice. Discovering cauliflower rice was like winning the carb lottery! The texture is so similar you won’t even miss the real version.
I cut out most gluten a million years ago – back in the day when eating fat-free was all the rage. It changed my life and helped me drop 25 pounds almost immediately. While I adhere to a pretty strict Paleo, gluten-free and dairy-free lifestyle, I will allow myself to indulge with the occasional sandwich, pasta, potatoes and rice.
Making a commitment to a Paleo lifestyle means being creative in the kitchen and finding alternatives to the white foods my family loves. When it comes to cooking, I’m up for a challenge and replacing white rice with cauliflower rice has been a hit around here.
The good news for you is that it’s so simple and easy! You’ll need very little supplies and ingredients. Start with organic cauliflower{ if possible}, sharp chef’s knife, cutting board and food processor.
Wash cauliflower and remove the steam leaves and core.
I usually cut the florets relatively small. Even smaller than this is ok and will help break down easier.
Fill your food processor about half way with the cauliflower pieces. I started making cauliflower rice with a four cup food processor but upgraded last year with an 11 cup and it made a big difference. The cauliflower can get a little mushy if you over process so having more space to move around is the key.
Pulse for a few seconds until the cauliflower has broken into tiny pieces that resemble white rice.
- 1 small head of organic cauliflower, finely chopped in food processor
- 1-2 tablespoons of coconut oil
- salt and pepper to taste
- Cut florets in small pieces and place in food processor. Pulse until the cauliflower is reduced to the size of couscous or rice grains. Depending on the size of your food processor, you may need to do this in multiple stages.
- Place in microwavable bowl with glass lid like Pyrex.
- Add coconut oil, salt and pepper
- Microwave 5-6 minutes and set for 1-3 to allow rice to steam a little longer.
- Fluff rice, season to your preference as needed.
I keep my cauliflower rice simple and quick but there are many ways to make it more interesting. You can sauté with lime and cilantro, stir fry and more!
