It’s been a little over a year that I “officially” went Paleo and began sharing weekly meal plans featuring many of my favorite Paleo blogs. Elana’s Pantry has been an important part of my journey and her recipes have become a staple in our kitchen.

With her follow-up cookbook –Paleo Cooking from Elana’s Pantry: Gluten-Free, Grain-Free, Dairy-Free Recipes – I waited impatiently for months to get my hands on a copy. It was worth the wait.

I love that Paleo Cooking provides tips for stocking your pantry, Paleo guidelines (great for beginners) and sources to find all the products used in each recipe.
Elana’s Paleo journey began when her son was diagnosed with celiac disease, it became a necessity to transform her family to a gluten-free, grain-free diet. Unwilling to cook separate meals for her family, she began exploring how to prepare gluten-free food that tasted like regular food.
This is what drew me to her blog – elanaspantry.com from the beginning. Her ability to take recipes we all love like chocolate chip cookies, bread, chicken nuggets and rice and not sacrifice taste for being healthy.
