Surprisingly I managed to pull off most of last week’s meals each night with the exception of the Mexican Rice Bowls from PaleOMG.com. It looks easy and delish so I’ll reschedule for another time.
If you didn’t have a chance to try the Artichoke Lemon Pesto Chicken Pasta from PaleOMG.com be sure to PIN these and put on your to-do list. I’ve grown tired of fighting with the girls to each my Paleo concoctions. Opting to save a portion of the main ingredients before adding sauces and spices to serve as their meal, worked well both nights. Less fighting = more eating in our house.

Paleo Weekly Menu – September 22nd
Sunday: Leftovers from this weekend’s take out. I was too tired to cook today.
Monday: Paleo Beef Stew with sweet potatoes, parsnips and kale. My recipe is adapted from Butter in My Coffee. I’ll post it this week once the fam has approved.
