Word on the street is that the first day of Spring was this week. Um, it snowed here. Winter can bite me. I’m still wearing furry boots and freezing my tushie off so there’s nothing in the air remotely related to spring. PS – it snowed again last night.
Ok enough ranting. This week we are on Spring Break and cooking will be a little tricky because we will be on the go. No official plans to travel as we already took our spring break in February.
To keep you on track, I’ve rounded up some of my favorite Pinterest recipes to get you through the next five days. Hope you’re staying warm!
weekly meal plan: march 23rd
Sunday: Leftovers
Monday: Paleo Spaghetti Squash Carbonara (if you haven’t made this yet, what are you waiting for??. It’s the bomb!) + Green Salad
Tuesday: Paleo Cesar Salad
Wednesday: Thai Chicken Enchiladas (YUM!) Can’t wait to try this. Substitute canola for olive oil and use gluten free or corn tortillas in place of flour tortillas.
Thursday: Leftovers – Give yourself the night off. If you’ve cooked every night this week you should have something in the fridge.
Friday: Pan-Fried Steak with Spiralized Onions, Mushrooms & Blue Cheese if you love MEAT you must make this recipe. Its the perfect end to a busy week. Pair it with a bottle of Dry Creek Zinfandel and you’re good to go!
