I am officially challenging myself for the next 4 weeks to plan my dinner menu every night and post it on Monday mornings. The following day I will post the recipe and let you know if it was worth making and what my family thought.

If you are like me between work, school and activities, it has become imperative that I am organized. Gone are the days when I could whip out a meal off the top of my head. If I have to think more than two minutes about what’s for dinner, we end up ordering delivery. I am so tired of ordering food when I can prepare a meal at home that tastes better, costs less and is much healthier.
Last week I tested out my weekly menu and managed to accomplish every night except for one. This week I am giving myself a free night on Saturday (maybe Friday).

Sunday – Chicken & Sausage Gumbo (family recipe)
Monday – Leftover Gumbo
Tuesday –Rosemary Chicken with White Beans
Wednesday –Guacamole Salad
Thursday – Leftovers
Friday – Grilled NY Strip, Roasted Asparagus, Grilled Romaine, Orzo Salad
Saturday – Pizza Night – We ordered out!
