This week JoLynne and I have been in Costa Rica trying to help one another stick with our grain free, sugar free lifestyle. Let me tell you folks it wasn’t always easy. Surprisingly steering clear of alcohol wasn’t my issue, it was trying to find my greens! We were staying at the Westin Conchal which thankfully offered a Super Foods menu at their buffet restaurant which offered healthy items like raw broccoli, spinach, mushrooms, carrots, etc. They took it a step further by combining veggies with different salad options or a la carte.
Going off property was somewhat challenging but letting the restaurants know food preferences ahead of time helped significantly. It was a great trip and I can’t wait to share more about Costa Rica.
Now it’s back to reality and cooking. Being away for five days and having no control over my meals, I’m excited to get back in the kitchen.

Monday: Paleo Asian Stir Fry by Sweet C’s Design
Tuesday: Cilantro Lime Chorizo Meatballs by Taylor Made it Paleo + Cauliflower Steaks + Green Salad
Wednesday: Butternut Squash Noodles with Pumpkin Sage Sauce by Inspiralized + Spinach Salad
Thursday: Leftovers
Friday: Paleo Taco Night
