Preparing my homemade chicken broth is so easy your toddler could do it! I use this recipe for all my homemade soups that require cooked chicken and broth.
- 4 chicken breasts (I use boneless but on the bone is even better)
- 4 cloves of garlic
- 2-3 bay leaves
- 1-2 tsp of dried thyme
- 2 tsp of kosher salt
- 2 carrots
- 2-3 celery sticks
Turn oven on to 350 degrees. Fill 5 quart dutch oven with water, add chicken breasts (can be frozen), garlic, bay leaves, thyme, carrots, celery and salt. Bring to a boil on stove top.
Turn off burner and put into entire pot into oven. Bake for an hour (or longer) or until chicken is cooked. Be careful not to dry out chicken.
Remove chicken from pot. I normally take a larger Dutch oven, place a strainer on top and pour all the liquid into my soup pot.
