Did you know today is National Coffee Day? Rather than rushing to a local coffee shop, try making it yourself! To celebrate I’m sharing my favorite Paleo coffee recipe.
I’ve cut back significantly per doctors order (thank you adrenal fatigue), but that doesn’t stop me from enjoying a cup on the weekends. Since starting the 21 Day Sugar Detox (coffee is allowed), I’ve been savoring a few more cups during the week.
Something you may not know about me? I’m a major coffee snob and have been for years. You can thank the Italians for this one.
It all started after traveling to Italy in my late twenties. I wasn’t a coffee drinker because growing up being served Folgers, I never understood what the big deal was. It tasted like water downed dirt. No thanks.
But then I spent a week sipping magical espressos and cappuccinos and everything changed. Returning home I purchased a stovetop espresso maker and became obsessed with finding the perfect Italian coffee beans.
Then Starbucks opened and started serving Americans burnt coffee to go. Tragic.

Blending the coffee with coconut oil is perfection in a cup. It becomes frothy and smooth, very similar to a cappuccino. Most days I prepare espresso using our Cuisinart Immersion Blender. You can also prepare tea the same way and it’s delicious.
