Steering clear of of processed food as much as possible is not easy when it comes to packing school lunches and snacks. I’m always on the hunt for nut-free snack recipes, preferably gluten-free and no refined sugar.
The girls love granola bars – it’s an easy on-the-go snack, but many gluten-free commercial brands my kids won’t touch. Gluten-free is usually replaced by almond flour (be sure to read labels!) and snacks must be nut-free at our school.
So let’s break this down. I’m now looking for a granola bar recipe that is nut-free, gluten-free with no refined sugar. Pinterest to the rescue!
I hit the jackpot finding this super-easy Nut-Free NO BAKE Granola Bar Recipe (and gluten-free) using the secret ingredient – coconut butter. Not coconut oil – delightful, wonderful coconut butter. As in a nut-free butter option. I’ve tried using sun butter several times, but my kiddos are not fans of the taste.
I’ve modified Sugar Free Mom’s granola bar recipe a little by omitting the sunflower seeds and Stevia. It turned out sweet enough without adding and my kids don’t like seeds yet.
We’ve also added chocolate chips but that was a little too rich for a school snack, but it definitely works. My version doesn’t always turn out as pretty but who cares if it’s a big hit!
I can’t rave enough about this recipe and make it almost every other week. It seriously takes only a few minutes to assemble. The fact that it’s no-bake is the icing on the granola bar.
- 1 cup gluten free crispy brown rice cereal
- ¾ cup rolled oats, gluten free
- ½ cup unsweetened shredded coconut
- ¼ cup unsweetened organic cocoa powder
- ¼ cup ground flaxseed
- ⅓ cup coconut butter, melted
- ⅓ cup raw unfiltered honey {also use this and this}
- 1 teaspoon organic vanilla extract
- In a large bowl stir together the first 5 ingredients {all dry} until well blended.
- In a separate glass bowl add the coconut butter, honey, and vanilla. Melt in microwave for 1 minute and stir completely until well incorporated.
- Pour into the dry ingredients and mix well.
- Line an 8 by 8 baking dish with parchment paper hanging over opposite sides. Spray the parchment paper with nonstick cooking spray.
- Pour the mixture into the baking dish.
- Spread to edges and press down with a spatula to even off the top.
- Refrigerate for 30 minutes.
- Lift by parchment paper onto a cutting board.
- Slice into squares or bars.
- Wrap individually to store.
