The beginning of every New Year always inspires me to get organized, workout and eat healthy. Eating healthy means cooking dinner rather than ordering out. Living in Chicago it’s super easy to have a gourmet meal delivered to your doorstep in under an hour. To keep me on track with the Paleo lifestyle and meal preperation, I’m kicking off a Paleo Weekly Meal Plan link up.
The only way to be truly organized is by planning meals for the week and shopping for all necessary ingredients on Sunday. Creating a full Paleo menu plan for us newbies can take a little more thought. My decision to go Paleo started with breakfast, the girl’s school lunches and now is trickling down to dinner time. In the beginning preparing a Paleo meal had it’s challenges but it only took a few times and I got the hang of it.
My weekly meal plan will consist of just that – a plan. Some of the recipes will be my own or a revised version of another recipe. Most nights I’ll make enough so we have leftovers for the following night. It’s just too difficult to cook a full meal every evening around here.

Friday: Modified Paleo Pizza Night with Coconut Flour Pizza Crust – Found this coconut flour pizza crust recipe on Pinterest from This Chick Cooks. Not only is it clever using coconut flour with mozzarella cheese, its so yummy. You won’t miss the grains or gluten! I had to modify the name of this meal to Modified Paleo Pizza Night because true Paleo’s don’t eat dairy.
