Last week was super crazy but I managed to pull off 3 nights of cooking at home. This week I’m determined to accomplish at least 3 nights but the bigger task is will my kids eat what’s on the menu?
Going Paleo is not an easy transition for little palates. It’s similar to becoming a sneaky chef however you’re not pureeing and hiding items. Your replacing white rice with cauliflower rice, lasagna noodles with eggplant or zucchini and white flour with almond and coconut flour.
While I’m intensively fascinated by exploring and experimenting with eating whole foods vs processed, my girls are not so eager to jump on board. This week’s menu plan is focusing on preparing items mixed with Paleo substitutions like zucchini pasta and spring pasta.
Thanks to my friend at JoLynne for including PaleoOMG (one of my favorite Paleo blogs) Spring Pasta in this week’s Spaghetti Squash Carbonara (which will blow your mind) from Three Diets One Dinner but thought the Spring Pasta looked like a nice alternative. I’m up for the challenge.
The looming question is – Will the girls eat this? Wish me luck!
