weekly meal plan: april 13th
Sunday: Carnitas and Avocado-Plantain Rice with Tomatillo Salsa Verde (Confession: totally forgot last Friday was our school’s Father Daughter Dance so we ate out. Really wanted to try this so I’m making it tonight.)
Monday: Mediterranean Spaghetti Squash with Feta Cheese & Roasted Red Peppers + Grilled Chicken Breast (Optional)
Tuesday: Leftovers – Family gets to choose from Sunday or Monday leftovers, I take the night off!
Wednesday: Chicken Meatloaf and Cauliflower Mash + Spinach Salad (This is an old standby that I know the girls will eat, however this time I’m going to use ground chicken rather than pork and forgo the bacon.)
Thursday: Miso Soup with Green Tea & Zucchini Noodles
Good Friday: Pan Fried Tilapia + Gruyere & Asparagus Potato Noodle Casserole + Green Goddess Salad
