Who doesn’t love a good quiche even better if it’s gluten-free! I whipped up this healthy bacon and tomato quiche with spinach inspired by the 21 Day Sugar Detox cookbook. Not only was it extremely easy, it was delicious and made enough for breakfast several days.
The full recipe is provided as it appears in the cookbook, however I omitted the chives because I didn’t have on hand and garlic. Honestly, it was just as good and weren’t missed.
Now that I’ve completed the Bulletproof Diet suspect vegetable list. That’s an entirely different conversation.
- Preheat oven to 375 F
- Slice the bacon crosswise into ¼ strips
- Cook bacon in medium skillet until fat is rendered and meat is cooked, approximately 8-10 minutes.
- Remove bacon from pan, drain on paper towels, reserve the fat.
- In a large mixing bowl whisks eggs, garlic, chives, basil, salt and pepper until well combined. Stir in spinach.
- Grease 9x11 inch baking dish with reserved bacon fat, pour in egg mixture.
- Top with bacon pieces and cherry tomato halves.
- Bake for 30-35 minutes or until quiche puffs up and becomes golden brown on the edges.
