Hello friends and happy Sunday! Hope you are staying warm and healthy this month. How was your week? I think I’m still playing catch up from my GNO extravaganza. Friday night I crashed at 7:30 and slept for 12 hours straight.
Sleeping is good and I never get enough during the week. That’s on my 2014 goal list. More sleep and less screen time at night. It truly does disrupt slept patterns. The catch 22: nighttime is when I’m inspired to write.
If you caught last week’s Paleo meal plan which included Paleo Tater Tots, I can tell you it was a big fat failure. I had high hopes and talked it up all week to the girls. The consistency was not thick enough to maintain the shape of tater tots and the flavor was blah.
Sometimes when cooking with almond meal flour it helps to stiffen the batter if it’s refrigerated for awhile. No go with the tater tots. Luckily I was able to salvage and create a cauliflower soufflé. Hubs really liked it so it wasn’t a complete failure.
My favorite recipe of the week was PaleOMG’s Spaghetti Pie. I pretty much ate this for three days straight. Highly recommend giving it a try even if you are NOT paleo. It’s pretty fantabulous.

Wednesday: Greek Turkey Burgers from Paleo Cooking from Elana’s Pantry + Roasted Broccoli
Thursday: Chicken + Carrot Fries + Green Salad
