My favorite dish was the Quinoa, Squash and Avocado Timbale Stacks – you have to try this. It’s become a big hit around here.
Another fav was the Raw Vegan Lasagna from Bare Root Girl. The flavors were outstanding but I made the mistake of not adding enough sun dried tomatoes for the sauce. Oops! Other than than it worked and hubs actually liked it.

You may notice a lot of salads – almost every night. I recently made a new rule is our house that we start meals off with some type of green salad. This could be with spinach or romaine but something raw must enter everyone’s body. So far there have been no complaints and it’s working. I can’t seem to get the girls to expand their vegetable options so this is our compromise.

Monday: Paleo Chicken Nuggets + Green Salad + Sweet Potato Fries
Tuesday: Fish Sticks + Steamed Broccoli + Carrot Fries
Wednesday: Baked Potato Bar (JoLynne posted this last week and I’m totally giving this a try) + Spinach Salad
Friday: Free Night or Order Out
